Ecological Landscaping
Ecological landscape design balances our yards with the natural environment. This course will provide the knowledge to create environmentally-responsible landscapes around our homes that improve and enhance the site conditions for both humans and wildlife alike. Topics include designing for passive solar in winter and cooling in the summer; low water usage and water cachement; planting techniques; access issues; incorporating utility areas into the landscape; native and edible plants and trees; perennial vegetables; attracting beneficial insects, butterflies and birds; organic pest control; composting; and victory gardens. The course includes a Saturday field trip to illustrate the design principles discussed in class.
Required Text: Gaia's Garden by Toby Hemenway
Instructor: Deborah Judson-Ebbets is certified in permaculture design and has worked as an ecological landscape designer for twenty years. She is currently on the board of the Piedmont Group of the Sierra Club and has also served on the boards of the Natural Organic Farmers Association and Ecological Landscaping Association.

Medicinal
Herbs
Create your own herbal first aid kit. This course provides a working knowledge of the medicinal qualities of different herbs and teaches students how to identify, grow and use them. It explores garden herbs,wild herbs, culinary herbs and Chinese herbs, including how to prepare soothing and relaxing teas to help fall asleep and a special Chinese herbal formula to ward off colds.
Students learn about organic herb gardening, review basic herb garden designs and examine the conditions necessary for optimal plant growth.
The course includes a two-part field trip: first to the woods to learn how
to identify local wild herbs and then to the instructors own herb
garden for a hands-on illustration of many of the principles discussed in class.
Required Text: Rosemary Gladstars Herbal Recipes for Vibrant Health.
Instructor: Deborah Judson-Ebbets is an expert on medicinal plants and
edible wild herbs and has been teaching the subject since 1980 at such
prestigious institutes as the Arnold Arboretum of Harvard University. She holds
a B.A. in psychology and sociology, an A.D. in horticulture and a Master
Gardener Certificate, in addition to coursework in American and Chinese Herbs.
